Going to VietNam, people will recommend you to dynamic places, including Hanoi which is in the North, but also Ho Chi Minh city, which is the South. Both of these places have famous cuisines that made Gordon Ramsey travel straight here, especially Ho Chi Minh city.

The Southern cuisine is very diverse, including all types of food from the “ground” to the “sea”. But the most familiar and popular-gaining is “Hủ Tiếu” and other types of salty cakes. But the taste of the food mostly has a sweet taste mix with the sourness from lemons and pineapples. These tastes are common, and they will amaze your tasting senses.

1. Southern Vietnamese cuisine depends on the season (rainy season and dry season)

2. Southern Vietnamese cuisine is influenced by many different cultures (Northern Vietnamese cuisine, Central Vietnamese cuisine, and Khmer culture) but they are all modified to suit the characteristics of Vietnam.

3. They like to eat strong palates. First, when it's spicy, it's very, very spicy. Second, having eaten sweet is extremely sweet. And bitter is very bitter. And another thing is that they like hot food. Nice!

4. Southern cuisine is rustic. In fact, all traditional Vietnamese food is close and simple.

p/s: If you watched Master Chef a few years ago, do you remember Gordon Ramsay telling his contestant to cook pho that he ate on a boat while traveling in the south? All candidates considered this to be a difficult challenge. But the bowl of pho Gordon eats in Vietnam is cooked from a very ordinary pho seller.

It’s hard to define the characteristic of the cuisine in Southern Vietnam,because Southern Vietnamese eating many dishes that originated from other regions and countries. Many say Southern Vietnamese love sweet dishes than other regions. But in reality that yes Southern Vietnamese do eat some sweet things,but they also love many of sour,spicy,bitter and salty dishes . With abundance of resources such as rice,fish and vegetables ,alongside with other outside influences that have made up the characteristic of Southern Vietnamese cuisine.

Here’s some Southern Vietnamese dishes that may(or may not) influence from others:

Phở -a beef noodle brought to the South by Northern Vietnamese immigrants during the 1950s but with different that the Northern Phở that the Southern Phở use less MSG than the Northern ones,and they also eating Phở with more vegetables,sauces and herbs.

Bánh bò -many say it came from China,Cantonese region(GD+GX+HK)- White sugar sponge cake . But “Bánh bò” does have coconut inside this cake,while the Cantonese one doesn’t.

Bánh bông lan -this sponge cake is come from the West,maybe from the French during their occupation in Vietnam.

Bò kho -a classic dish in Saigon,some saying it’s a unique dish in Saigon and the Southern Vietnam region,not being influenced from other Vietnamese regions. Though it look very like a “Westernized” dish.

Curry chicken with coconut milk ,I guess you know this dish originated from(India).

Bánh xèo -somewhat similar to crepe but not originated from Europe. There are many evidence that dish is come from Cham and Khmer people or mixture and created based on their dishes.

Northern Vietnamese food tastes could be described as mild & lingering

Central Vietnamese is piquant & savoury

South Vietnamese is sweet & varied personally I opt for piquant & savoury.
