Why did the Vietnamese name their currency after a slang word for the male organ?

No they didn’t and it doesn’t even sound like that word at all it’s just English speakers are too lazy to learn to pronounce it correctly and ignorant enough to ignore the tone marks, so they just choose a similar English word which is easier for them to pronounce and write it. Sometimes with other commonly used words, it seems like they even remove the blank space if they feel like it.

The Vietnamese currency is đồng, meaning coin or copper. It has nothing to do with “dong” in English. These two languages are not related in the slightest bit, and I don't know why you would think these two words have anything to do with one another.

English was not a Vietnamese spoken language. “Đồng" is the copper/bronze and also the currency of Vietnam since ancient time.

During Vietnam war, US media was so lazy and ignorant that they mispronounced the first name of President of South Vietnam Ngô đình Diệm. They also couldn't recognize Việt Cộng/ VC was the general term of V ietnamese C ommunist. In general, US media inadvertently helped Viet Cong won the war against South Vietnamese nationalists.
