How much you should change depends on what you will be using it for. Just get a couple of million, it should keep you for a few days. A couple of million is about US$100
Last I heard there was zero difference between rates at the airport and downtown. Look at the rate of exchange at the place of exchange for the best rate. You'll probably not find that it matters much whether you exchange US or AUS currency.
